- ¼ cup ghee or butter
- 1 tablespoon olive oil
- 1 lb Yukon Gold potatoes, cut into ½ inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- 1 ¼ lb sirloin steak, cut into ½ inch cubes
- Sea salt and black pepper to taste
Instructions
- Heat a large cast iron skillet over medium heat. Add olive oil and two tablespoons of ghee.
- When melted, add cubed potatoes with minced garlic, thyme, oregano, salt, and pepper. Cook for 8-10 minutes until golden brown and fork-tender. Remove from the pan.
- Increase heat to medium-high; add remaining ghee. Once melted, add seasoned steak bites. Sear for about 2 minutes per side until browned.
- Combine cooked potatoes back into the skillet with steak. Adjust seasoning as needed and garnish with chopped parsley before serving.
