Instructions
- In a saucepan, boil crushed pineapple and sugar until it reaches a full rolling boil; remove from heat.
- Stir in lime Jell-O until fully dissolved; let cool.
- Whip the cream in a separate bowl until soft peaks form (no added sugar needed).
- Gently fold sour cream into whipped cream, then combine with the cooled Jell-O mixture.
- Line a 9 x 5 inch loaf pan with wax paper; pour in the creamy mixture.
- Cover with aluminum foil and freeze for at least 4-6 hours or overnight.
- When ready to serve, allow to sit out for 5 minutes before slicing into ¾ inch pieces.
