- 1 cucumber

Instructions
- Prepare the dressing by whisking together olive oil, balsamic vinegar, dried oregano, dried basil, salt, and pepper in a mixing bowl.
- Chop the cucumber into small pieces after peeling and fork-scoring it. Quarter the cherry tomatoes and chop the red onion into small pieces.
- In a large bowl, combine diced cucumber, quartered tomatoes, chopped red onion, and fresh mozzarella. Drizzle with dressing and gently toss until well coated.
- Garnish with finely chopped parsley before serving.
