- 1 fryer chicken (broken into pieces)
- 1/4 cup unsalted butter (softened)
- 3 cloves garlic (minced)
- 3 sprigs rosemary (minced)
- 1/2 cup balsamic vinegar
- 1/2 cup fig preserves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 425°F (218°C).
- In a small bowl, mix softened butter, half the minced garlic, rosemary, salt, and pepper.
- Rub the butter mixture on chicken pieces in a cast iron skillet.
- Roast chicken in the oven while whisking together balsamic vinegar, fig preserves, remaining garlic, rosemary, salt, and pepper.
- Baste chicken with sauce after 15 minutes and continue roasting, basting every 10 minutes until an internal temperature of 165°F (74°C) is reached.
- Let rest before serving with remaining glaze poured over.
