- 5 ripe peaches, cut into wedges
- 125 g fresh raspberries
- 75 g caster sugar (for fruit)

- 90 g caster sugar (for topping)
- 140 g plain flour
- 1 teaspoon baking powder
- 2 teaspoons milk
- Zest of 1 lemon
- Demerara sugar for sprinkling
Instructions
- Preheat the oven to 160°C (fan) or 170°C (conventional).
- Slice peaches and combine them with raspberries and caster sugar in a bowl. Transfer to an ovenproof dish.
- In a mixing bowl, mix flour, baking powder, and sugar. Rub in cold butter until crumbly. Stir in lemon zest and milk to form a soft dough.
- Spoon the topping over the fruit mixture and sprinkle with flaked almonds and Demerara sugar.
- Bake for 25–30 minutes until golden brown.
