Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)
- ⅓ cup mayonnaise
- ⅓ cup sour cream
- Juice and zest of 1 large lime
- 2 tablespoons chopped fresh dill
- 1 tablespoon Dijon mustard
- 1 garlic clove (minced)
- Kosher salt
Instructions
- Prepare the dressing by mixing mayonnaise, sour cream, lime juice and zest, dill, mustard, garlic, and salt in a bowl. Chill.
- Boil water in a large pot; cook shrimp for 2 to 3 minutes until pink.
- Make an ice water bath and transfer cooked shrimp to cool for about 3 minutes before draining.
- Chop the cooled shrimp and combine with cucumber, green onions, and dressing in a bowl. Mix well.
