  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)

Instructions

  2. Boil water in a large pot; cook shrimp for 2 to 3 minutes until pink.
  3. Make an ice water bath and transfer cooked shrimp to cool for about 3 minutes before draining.
  4. Chop the cooled shrimp and combine with cucumber, green onions, and dressing in a bowl. Mix well.
