- 2 eggs
- 2 tablespoons water
- ⅔ cup shredded sweetened coconut flakes
- ⅔ cup panko bread crumbs
- Oil for frying
Instructions
- Prepare your coating station with four shallow bowls: one with flour mixed with chili powder, salt, and pepper; one with whisked eggs and water; one with coconut flakes; and one with panko.
- Coat each chicken tender in flour, dip in egg wash, then cover in coconut flakes followed by panko.
- Heat oil in a skillet over medium heat. Carefully add tenders without overcrowding the pan.
- Fry until golden brown and cooked through (approximately 5-7 minutes total).
- Cool on a wire rack and serve warm with sweet chili sauce.
