Instructions

  1. Whisk together olive oil, vinegar, lemon juice, honey, garlic, salt, and pepper in a mixing bowl for the dressing.
  2. Boil water in a large pot; prepare an ice water bowl nearby.
  3. Cook corn in boiling water for 2-3 minutes; immediately transfer to ice water to cool.
  4. Cut kernels from cooled corn cobs into a large mixing bowl.
  5. Combine corn with grape tomatoes, cucumber, red onion, feta cheese, parsley, and basil.
  6. Pour dressing over the salad mixture and toss well to combine.
