Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In another bowl, beat the softened butter and granulated sugar until light and fluffy. Add eggs one at a time to the butter mixture, mixing well after each addition. Stir in both vanilla and coconut extracts for added flavor.
  4. Gradually mix in the dry ingredients along with the coconut milk until just combined.
  5. Pour equal portions of batter into each prepared cake pan. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Allow cakes to cool completely in their pans before transferring them to a wire rack.
  6. In a mixing bowl, beat together cream cheese and powdered sugar until smooth. In another bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until fully incorporated.
