Instructions
- Preheat your oven to 350°F and prepare mini loaf pans by greasing and lining them with parchment paper.
- In a mixing bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, oil, and vanilla until smooth.
- In another bowl, sift together flour, baking powder, baking soda, pumpkin pie spice, and salt before incorporating it into the wet mixture.
- Divide the batter among the prepared pans and sprinkle generously with cinnamon sugar. Swirl gently with a toothpick or knife.
- Bake for 28-30 minutes or until a toothpick inserted into the center comes out mostly clean. Let cool for 10-15 minutes before removing from pans.
