  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, mix together brown sugar, softened butter, and cinnamon to create the filling.
  3. In a large bowl, combine all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  4. Using a stand mixer, cream cold cubed butter with granulated sugar until smooth. Add eggs and vanilla extract; mix well.
  5. Gradually incorporate dry ingredients into the wet mixture until fully combined.
  6. On a floured surface, shape dough into a rectangle and spread the cinnamon filling evenly on top.
  7. Roll up dough tightly from one long side and slice it into 10–12 cookies.
