- 1 cup packed brown sugar
- 6 Tbsp. softened butter
- 2 Tbsp. cinnamon
- 8 oz. cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 1/2 cups confectioners sugar
- 1 tsp. vanilla extract
- 1/2 tsp. salt
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix together brown sugar, softened butter, and cinnamon to create the filling.
- In a large bowl, combine all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
- Using a stand mixer, cream cold cubed butter with granulated sugar until smooth. Add eggs and vanilla extract; mix well.
- Gradually incorporate dry ingredients into the wet mixture until fully combined.
- On a floured surface, shape dough into a rectangle and spread the cinnamon filling evenly on top.
- Roll up dough tightly from one long side and slice it into 10–12 cookies.
- Place cookies on a parchment-lined baking sheet and bake for 9–11 minutes until edges are lightly golden.
- Cool cookies before frosting with cream cheese mixture.
