Ingredients
- 1 small head garlic
- 1 cup chopped fresh cilantro
- 1 lime (juiced)
- 3 tablespoons extra virgin olive oil
- 1 ½ pounds large shrimp (peeled and deveined)
- Kosher salt and black pepper
Instructions
- Preheat your oven to 400°F.
- Trim the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about 10 minutes.
- Once cooled, peel and finely chop the roasted garlic.
- In a bowl, combine the chopped garlic, cilantro, lime juice, olive oil, and harissa; whisk until mixed.
- Heat a skillet over high heat, season shrimp with salt and pepper, and cook for about 2 minutes per side until pink.
- Toss cooked shrimp in the garlic sauce and serve immediately.
