Ingredients
- 2 slices of sourdough or artisan bread
- 1/2 ripe avocado, mashed
- 1/2 cup cooked shredded chicken (grilled or rotisserie)
- 2 slices of cheddar or Monterey Jack cheese
- 1 tbsp mayonnaise or aioli (optional)
- 1 tsp lemon juice
- 1 tbsp butter (for toasting)
- Salt and pepper to taste
Instructions
- In a mixing bowl, mash the avocado with lemon juice, salt, and pepper until smooth.
- If using mayo, spread it on one side of each slice of bread. On the unbuttered side of one slice, evenly layer the avocado mixture, followed by shredded chicken and cheese. Top with the second slice, mayo side facing out.
- Heat a skillet over medium heat and melt butter until bubbling. Carefully place the sandwich in the skillet and grill for about 3–4 minutes per side until golden brown and cheese is melted.
- Remove from heat, slice in half, and serve hot.
