  • 110 grams almond flour (sifted)
  • 200 grams powdered sugar (sifted)
  • 12 drops red food coloring
  • 113 grams unsalted butter (room temperature)
  • 180 grams powdered sugar
  • 60 grams salted caramel

Instructions

  1. Prepare the Apple Filling by melting butter in a pan, adding diced apples and cinnamon until softened. Mix in salted caramel and let cool.
  2. Make Macaron Shells by whipping egg whites until stiff peaks form. Gradually add sugar; fold in sifted almond flour and powdered sugar until combined. Add food coloring if desired.
  3. Pipe the mixture onto parchment-lined baking sheets and let rest for 30 minutes before baking at 150°C (300°F) for about 15 minutes.
  4. Prepare the Buttercream by beating unsalted butter until creamy; mix in powdered sugar and salted caramel.
  5. Assemble the macarons by pairing shells and filling with buttercream and apple filling.
