Instructions
- Preheat the oven to 375°F (190°C).
- In a stand mixer, beat softened butter or margarine with both sugars until creamy. Add eggs one at a time, followed by vanilla.
- In a separate bowl, whisk together salt, baking soda, and pudding mix. Gradually add this mixture to the wet ingredients while mixing slowly.
- Slowly incorporate flour until just combined.
- Fold in butterscotch and white chocolate chips using a wooden spoon.
- Chill the dough in the fridge for 15–20 minutes.
- Drop rounded tablespoons of dough onto a greased baking sheet and bake for 7–9 minutes until lightly golden brown.
- Transfer cookies to a cooling rack to cool completely.
