- 1 lb lean ground beef
- 12 oz romaine lettuce
- 1 cup chopped grape tomatoes
- 1/4 cup diced red onion
- 3/4 cup diced dill pickles
- 2 tbsp light mayo
- 2 tbsp ketchup
- 1 tbsp pickle juice
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- Salt, to taste
- Black pepper, to taste
- 1 tbsp olive oil
- 2–3 garlic cloves, minced
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté diced onion and minced garlic until soft (about 5 minutes).
- Add lean ground beef to the skillet and season with salt and black pepper. Cook until browned and no longer pink.
- In a small bowl, mix light mayo, ketchup, pickle juice, onion powder, garlic powder, salt, and black pepper to create the special sauce.
- In a large serving bowl, layer romaine lettuce followed by cooked beef, tomatoes, red onion, shredded cheese, and pickles. Drizzle with special sauce.
- Serve immediately or portion for meal prep.
