- Salt and pepper, to taste
- 8 oz spaghetti or penne pasta
- 2 cups cherry tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 2 tbsp balsamic vinegar
- 1/4 cup grated Parmesan cheese
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season chicken breasts with Italian seasoning, garlic powder, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Cook chicken for 5-7 minutes per side until golden brown and cooked through. Let rest before slicing.
- In a mixing bowl, combine diced tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, and salt to create the bruschetta topping.
- Toss cooked pasta in the skillet with any drippings from the chicken. Slice the chicken and place on top of the pasta followed by the bruschetta topping.
- Sprinkle with grated Parmesan cheese and garnish with extra basil if desired before serving warm.
