- 3 large sweet potatoes
- ½ cup cooked and crumbled turkey bacon
- 6 large eggs
- ¼ cup shredded white cheddar cheese
- 2 tablespoons unsalted butter
- Salt and pepper to taste

Instructions
- Preheat oven to 350°F.
- Prick sweet potatoes with a fork and coat with canola oil and salt. Bake on a baking sheet for 60-90 minutes until tender.
- Once baked, slice the potatoes in half lengthwise and scoop out the insides into a bowl.
- Mix the sweet potato insides with turkey bacon, butter, and cheese.
- Spoon filling back into potato skins, making wells for the eggs.
- Crack an egg into each well and season with salt and pepper.
- Bake again for 15-20 minutes until eggs are set.
