- 12 oz fresh blackberries
- 1 ½ tablespoon water
- Sugar (to taste)
- 6 oz cream cheese
- 4 tablespoons milk
- 2 tablespoons fresh lime juice
- ½ teaspoon lime zest (optional)
- 1 ½ teaspoon vanilla extract
- ½ cup powdered sugar
Instructions
- In a medium saucepan, cook blackberries and water over medium heat for about 10-15 minutes until softened. Sweeten with sugar if necessary.
- Blend the mixture in a powerful blender until smooth and chill for at least 30 minutes.
- In a bowl, mix cream cheese, milk, lime juice, lime zest (if using), vanilla extract, and powdered sugar until smooth.
- Layer blackberry puree and cream cheese mixture in popsicle molds. Insert sticks and freeze until solid.
- To serve, run warm water over the molds briefly to release popsicles.
