  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth. Refrigerate.
  2. For the cookie dough, cream softened butter with sugars until fluffy. Mix in egg yolks and vanilla.
  3. Combine flour, black cocoa powder, baking powder, and salt in a separate bowl; gradually add to the wet mixture until fully incorporated.
  4. Preheat the oven to 350°F (175°C). Scoop cookie dough, flatten slightly, fill with cheesecake mixture, top with another dough round, and seal edges.
