- 2 teaspoons vanilla extract (for cream cheese mixture)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a muffin pan with paper baking cups.
- In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
- In a larger bowl, mix pumpkin puree with granulated sugar and brown sugar. Add eggs, vegetable oil, and vanilla extract; stir until combined.
- Gradually mix in dry ingredients until smooth; fill muffin cups about three-quarters full.
- In a separate bowl, beat cream cheese with sugar, egg yolk, and vanilla extract until smooth.
- Top each muffin batter with about one tablespoon of cream cheese mixture and gently swirl using a toothpick.
- Bake for 18 to 20 minutes until a toothpick inserted comes out clean with few moist crumbs. Cool slightly before serving.
