- 1 green bell pepper (cut into 1" pieces)
- ¾ English cucumber (peeled, seeded, and quartered into 1" slices)
- 5 roma tomatoes (cut into 1" pieces)
- ¼ cup red onion (thinly sliced)
- ½ cup kalamata olives (whole and pitted)
- 8 ounces feta cheese (cut into ½" chunks)
- ⅓ cup olive oil
- 3½ tablespoons red apple vinegar
- 2 cloves garlic (minced)
- 1½ teaspoons dried oregano (or 1½ tablespoons fresh)
- 1 teaspoon dried dill (or 1 tablespoon fresh)
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Wash and chop all vegetables into 1-inch pieces.
- In a mixing bowl, combine chopped bell pepper, cucumber, tomatoes, red onion, olives, and feta.
- In another bowl, whisk together olive oil, vinegar, garlic, oregano, dill, salt, and pepper.
- Pour dressing over the salad and gently toss to coat.
- Garnish with fresh parsley before serving.
