- 1 cup glacé cherries
- 1 cup dried cranberries
- Zest and juice of 1 orange
- Zest of 1 lemon
- 1/2 cup cherry apple juice
- 3 large eggs
- 1 + 2/3 cups plain flour
Instructions
- Preheat your oven to 325°F (160°C).
- Cream together the butter and sugar until fluffy. Add eggs, orange zest and juice, and cherry apple juice; mix well.
- In another bowl, sift together flour and spices, then fold into wet ingredients.
- Gently mix in the dried fruits and nuts until evenly distributed.
- Pour batter into a prepared baking pan and bake for about 105 minutes or until a skewer comes out clean.
- Cool completely before feeding with cherry apple juice weekly.
