- 1 tablespoon lemon juice
- 1/2 teaspoon kosher salt
- 3 tablespoons extra-virgin olive oil
Instructions
- Whisk together lemon juice and salt in a small bowl; gradually add olive oil while whisking.
- In a large bowl, combine beets and half of the dressing; let sit.
- Just before serving, add cucumber, feta cheese, dill, and remaining dressing; toss gently until well mixed.
