- 1 pint cherry tomatoes
- 1 medium red onion, chopped
- 4 cloves garlic, minced
- 1 block (8 oz) feta cheese
- 1/4 cup extra virgin olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine chickpeas, cherry tomatoes, red onion, garlic, oregano, salt, and pepper.
- Drizzle olive oil over the mixture and toss to coat evenly.
- Place the feta block in the center of the dish.
- Bake for 25–30 minutes until tomatoes burst and feta is slightly golden.
- Let it rest for a minute before gently mashing everything together.
- Garnish with fresh herbs before serving.
