- 1 teaspoon pure vanilla extract
- ½ cup (120 ml) milk (room temperature)
- 1 ½ cups diced apples (Granny Smith or Honeycrisp)
Instructions
- Preheat the oven to 400°F and line a muffin tin with paper liners.
- In a bowl, mix flour, sugars, and cinnamon for the crumble topping. Add melted butter until clumps form.
- In another bowl, combine flour, baking powder, salt, and cinnamon.
- Using an electric mixer, cream together the butter and sugars until fluffy. Add eggs one by one, then incorporate sour cream and vanilla.
- Gradually mix in dry ingredients and milk until just combined. Gently fold in diced apples.
- Fill muffin cups three-quarters full with batter and top with crumble mix.
- Bake for about 20 minutes or until a toothpick comes out clean.
