  • 2 tablespoons apple cider (not reduced)
  • ¾ cup granulated sugar for coating
  • 2 teaspoons ground cinnamon or spice blend
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract for glaze
  • 12 tablespoons apple cider (not reduced) for glaze

Instructions

  1. Reduce apple cider in a saucepan over medium-high heat until it reaches ¼ cup; set aside to cool.
  2. Melt unsalted butter in another saucepan over low heat until browned; cool at room temperature.
  3. In a bowl, whisk together flour, baking powder, baking soda, cornstarch, spices, and salt.
  4. In a mixing bowl, combine cooled brown butter with sugars; add egg, reduced cider, and vanilla extract.
  5. Gradually stir in dry ingredients until just combined; chill the dough for enhanced flavor.
  6. Preheat oven to 375°F (190°C). Scoop dough onto a lined baking sheet and bake for 9–11 minutes.
