Instructions

  1. Boil the apple cider with mulling spices until reduced to about 1/3 cup; set aside to cool.
  2. Preheat oven to 350°F (175°C). Prepare the crust by blending cookies, melted butter, salt, and powdered sugar; press into an 8” springform pan and bake for 10 minutes.
  3. Lower oven temperature to 325°F (160°C). In a stand mixer, blend softened cream cheese and brown sugar until smooth. Add sour cream, vanilla extract, salt, cinnamon, and cooled reduced cider; mix until creamy.
  4. Gently incorporate eggs and flour until just combined. Pour into crust.
  5. Bake in a water bath for about 90 minutes or until edges are set but center wobbles slightly. Cool gradually in oven before refrigerating for at least 8 hours.
